As per the newest GDPR Regulation, EU customers and visitors must have access and be able to edit/ delete their consent about cookies. Some of the rights entitled are: 
Right to Access Personal Data: EU Users (Registered + Guests) can see the personal data the store keeps about them, including data previously hidden like IP addresses.

Right to Data Rectification: Users (Registered + Guests) can send a modify request to change/edit their personal data gathered by the site.

Right to Data Portability: Both registered and guest users can download their personal data, addresses, orders in CSV format and take it with them.

Right to be Forgotten/ Erasure: EU Users can indicate to remove all their personal data from any site.
